Mandarin Oriental Hotel Group is offering a job opportunity in Abu Dhabi, United Arab Emirates, as a full time Junior Sous Chef - Oriental Kitchen.

Duties & responsibilities

  1. Accepts flexible working hours according to the business demand
  2. Attends meetings and trainings required by the Oriental chef de Cuisine
  3. Assigns in details, specific duties to Unit Chef or subordinates and instructs them in their work
  4. Carries out full stock taking together with the Sous Chef at the end of each month in collaboration with the Cost Control Department
  5. Insists on personal cleanliness and proper discipline of all employees under his direct supervision
  6. To be responsible for the quality of all food prepared in Oriental Kitchen.
  7. Checks constantly all dishes for its taste, temperature and visual appearance. Makes sure that all dishes are uniformed and that established portion sizes are adhered to
  8. Acknowledges and screens daily work schedule
  9. Conducts daily briefing with his kitchen staff
  10. Acts on issues and concerns in his field of jurisdiction immediately
  11. Communicates effectively with guests, subordinates, immediate supervisors                                                                                             
  12. Manages time effectively by meeting deadlines on time
  13. Identifies and solves problems in a professional manner
  14. Displays creativity in production items and flexibility in customer demands
  15. Ensures that the image of the F&B operation will be improved at all given times
  16. Maintains his work environment clean and proper at all times
  17. Evaluates objectively the performance of his staff
  18. Provides the most effective training to all staff in his department


Eligibility criteria

  1. Minimum 2 years experience in the same role in luxury hotel or 5 year as Chef De Partie in a 5* hotel 
  2. Education background in Hotel Management School / Apprenticeship
  3. Full knowledge of the entire kitchen operation
  4. Must have full knowledge of sanitation requirements in food handling
  5. High level of creativity and quality standards
  6. Good leadership quality, training techniques, proper communication and organizational skills
